Mmmm… mangoes are the perfect fruit for devouring on a hot summer’s day. Their juicy texture is perfect for salads and can be served at any time of day.
For this recipe I decided to cut the mangoes into strips, but you can also dice them along with the onions for a fruity salsa if you like.
The fruit salad recipe is great for an entree, but you could also enjoy this as a snack or dessert.
Easy Mango and Onion Salad
- 2 large Mangoes
- 2 thin slices of Onion
- 1 tbsp Lemon Juice
- 1/2 tbsp Brown Sugar
- 1 Pinch of Salt
- Peel and cut mangoes into thin strips. Place into a small-medium sized bowl.
- Cut onion slices in half and add to the mangoes.
- In a small bowl or measuring cup, mix lemon juice, brown sugar and sea salt. Add to mango and onion and toss.
- Cover and let sit on counter or in fridge for 30-60m before serving.
