This easy cottage cheese and cucumber salad recipe only takes a few minutes to prepare. It’s very filling, and can be served as a snack or as a side dish.

I needed to clean up some ingredients in the fridge one day, and this is what I came up with. The cottage cheese is filling, and the cucumber and dill give it a nice fresh taste.
Eat it plain, as is, or add some tasty crackers for some extra crunch.
- 1 500g container Cottage Cheese,
- 1 tbsp Dill, dried
- 1 tbsp Lemon Juice
- 1/2 tsp Real Salt Sea Salt or to taste
- 1/4 tsp Black Pepper, or to taste
- 1/3 cup Onion, finely diced
- 1 English Cucumber diced
In a medium sized bowl, mix first 5 ingredients.
Next, add the diced onion and cucumber. I like to dice to my cucumber into small pieces, but feel free to go with larger chunks. You can also peel the cucumber if desired.
Serve immediately, or chill for about 30-60 min as desired.
This recipe will keep in the fridge for a day or so.
The Cottage Cheese mixture from the first 5 ingredients is tasty on its own.
Here are my cucumbers, but you don’t have to dice them as finely if you’re pressed for time.
